I don't think you should feel in any way obligated to give your advisor anything of monetary value - but if you are close and have something sentimental to give or shared interests or something like that I think a gift would be fine.I'd bet that a nice - but not too sappy - letter saying how much you appreciated his advice and mentoring, etc. On a more pragmatic level - the dissertation copy may actually be used by future grad students who are doing related work.
